Farm-Fresh and Flavorful: Why We Love Duck Eggs (and think you will too!)
It is finally spring! If you visited our farm today you would see yellow, orange, and cream daffodils coming up everywhere with dots of deep blue grape hyacinths speckled throughout. Near the walkways, you would find patches of fragrant pink hyacinths, bright yellow dandelions and green and purple dead nettle.
If you listened, you would hear chicks peeping, the “baaaa” of baby goats, and the little baby quacks of ducklings.
Spring on our farm means our cows and goats can eat fresh pasture grass instead of hay. It means the return to my favorite routine of milking our dairy goats in the garden and having an abundance of nutritious raw milk in the kitchen to drink, turn into cheese, or make goat milk soap with. It means our chickens are laying spring eggs- the most delicious eggs of the year, and it means our ducks have started to lay again!
Of all the wonders of spring, duck eggs are one of my favorites! Let me tell you all the reasons we love them and why we think you will too!
Duck eggs are better for you! A duck egg has about 50% more protein than a chicken egg. They are great for athletes, people on high protein diets, or for anyone who is trying to eat more protein throughout the day.
Did I mention duck eggs are better for you? They are packed with nutrients. Duck eggs have higher concentrations of vitamin B12, vitamin B6, vitamin E, vitamin A, iron, selenium, and higher concentrations of omega-3 fatty acids than chicken eggs.
Duck eggs have bigger yolks and that means a richer flavor. Duck eggs have a creamy, velvety texture and deep flavor. Cook them just like chicken eggs, but use lower heat and a little extra butter. so the whites don’t get tough.
